Can I edit my tables and meeting rooms post-creation?

Yes. 

Admin users can edit tables and meeting rooms anytime by clicking on the ‘Add/Edit tables’ link at the top of the section. You can make changes even after finishing the setup of your event by going back to your global event settings or when managing your global event.
